• 2 cups raw cashews
  • ¾ filtered water
  • 2-4 Tb nutritional yeast
  • ½ lemon, juiced
  • 2-3 cloves of garlic
  • Salt, to taste
  • Optional: *(add fresh rosemary, thyme, or any other herb that floats your boat, chopped and blended inside)


  1.  Soak cashews in hot water for 20 mins
  2. Drain, rinse, and transfer to food processor or high-powered blender
  3. Blend cashews with all other ingredients until smooth
  4. Transfer ricotta to a bowl and refrigerate for a few hours to chill (or serve right away at room-temperature)

🧀 Keeps for 4-5 days in the fridge.
