
Ingredients:
- 2 cups raw cashews
- ¾ filtered water
- 2-4 Tb nutritional yeast
- ½ lemon, juiced
- 2-3 cloves of garlic
- Salt, to taste
- Optional: *(add fresh rosemary, thyme, or any other herb that floats your boat, chopped and blended inside)
Directions:
- Soak cashews in hot water for 20 mins
- Drain, rinse, and transfer to food processor or high-powered blender
- Blend cashews with all other ingredients until smooth
- Transfer ricotta to a bowl and refrigerate for a few hours to chill (or serve right away at room-temperature)
🧀 Keeps for 4-5 days in the fridge.
